Family Favorite Mac + Cheese [Recipe]


Hello! Today I am sharing the recipe for my all-time favorite comfort food. We’re talking every birthday-meal request I ever made since first eating solid foods, people. Mac and Cheese is probably the greatest thing to ever happen to taste buds (don’t tell chocolate I said that!)

Ingredients:

3 T butter

1/4 C flour

1 tsp garlic powder

1 C milk

1 C grated cheddar cheese

Cooked penne pasta (1 package)

Salt and pepper, to taste

Directions:

Cook and drain pasta, set aside. In a large saucepan, melt the butter over low heat. Slowly add flour to make a paste. I add about 1/4 C. at a time. When thick, slowly add milk. Again, I add it just a bit at a time–about 1/8 C. at a time. If you add the milk too fast, the roux will become too thick and will not create the nice creamy texture we all love. The most important part is to never let your roux boil. When combined and thick, add cheese and stir until melted. Add garlic, salt, and pepper. Take off of heat and add in the cooked noodles.

As a note, to make this dish a *little* healthier, we occasionally substitute about half of the noodles for steamed cauliflower. It’s a tasty and nutritious substitution.
